I was thinking... If you could find an enclosed field, or even a tennis court (if the dog enjoys ball games or chasing a flirt pole or something similar), it would be great to allow occasional off-lead time. There's a website that lists enclosed dog walking fields The Only Listings Site for Enclosed Dog Walking Fields in the UK or the rescue you use migth know of somewhere. Obviously take into account how high your dog can jump.
You might like to join a greyhound forum in general - you could try the rescue organisation Greyhound Gap. Greyhounds and similar types are very different from other types of dogs in how their brains work, so reading posts on there could give you some insight.
