Recipes For Hare?

Hello all

As I've mentioned before on K9, our lodger downstairs is a butcher and we are very lucky in that he brings our dogs more meaty bones (lovingly chopped up into whippet size pieces and vacuum packed!!) than our doggies could ever chew. He really is brilliant.

We humans occasionally get the fringe benefits too. Last night I came home to find a post-it on the fridge saying that he had left us some hare shoulders. :blink:

Our friend works for a commercial catering butcher so obviously London's snazzy restaurants and hotels don't want the shoulders, and they are otherwise thrown away!! But there's lots of meat on them and it would be criminal not to put it to good use.

So, any ideas for recipes? I've never come face to face with a hare before, let alone cooked one, and of course all the recipe books I brought over with me are no use - kangaroo perhaps but not hare!! :lol:

So, any suggestions for Sunday lunch tomorrow? The meat is really dark and gamey looking.

I havnt tried this one but its from a good recipe book I have

Take a saddle of HARE

remove skin and put in dish with 1 stick of celery

1 onion

1 chopped carrot and a sprig of thyme

bay leaf

1 glass of white wine

and marinate for 24 hours.....

Take out of marinade and put into a hot saucepan

and cook for 5 minutes each side

Take from the saucepan and keep warm

Add marinade to saucepan and one soupsoon of redcurrant jelly

half teaspoon of crushed peppercorns and

half pint stock

Let it reduce to two thirds, strain and mix in 2 ounces of butter and half pint double

cream, 3 ounces of sliced mushrooms and 3 soupspoons of vinegar

Stir until thick

I would try this myself....its sounds wonderful... :thumbsup:

:) Thanks. That sounds delicious!!!!!!! What a treat. I hope I can do it justice.

I am off to buy the rest of the ingredients now. I will post some photos and let you know how it goes. :D

JUGGED HARE.

1 HARE

1 ONION WITH 8 CLOVES STUCK IN IT

HERBS

CAYENNE PEPPER

2 oz BUTTER

2 tsp SALT

1 PINT STICK

THICKENING.

1 oz BUTTER

1/4 PINT PORT

1 oz FLOUR

1 tbsp REDCURRANT JELLY

shin and paunch hare(wipe but do not wash as washing removes flavour)

cut hare into joints and fry in butter.heat stock and add to it the joints,salt and pepper,and cloved onion.cook gently for 2~3 hours and allow to cool overnight.take out cloves and be sure to count them.reheat the next day and cook for 15~20mins until the flesh is ready to leave the bones.knead together the flour and butter and make into small balls.stir into stew 1/2hr before serving add port, wine and redcurrant jelly.
 
Gosh you were so lucky getting that given... :thumbsup: what a lot of meat

My hubby used to do a lot of shooting game years ago....and I miss my pheasants at Christmas time.

Did you end up cooking the hare, how'd it go? I've never had hare. I've only had bunny a few times but I cooked it and it wasn't very good. :( I'd love to try it cooked by an expert to see how it's really supposed to taste.
